Bean and pasta soup

Ingredients
  • 2 teaspoons olive oil
  • 1 onion, finely chopped
  • 4 bacon rashers 97% fat free, finely chopped
  • 1 carrot, grated
  • 410g can Thick and Rich finely chopped tomatoes
  • 1 tablespoon Tuscan seasoning
  • 1 tablespoon dijon mustard
  • 3 cups chicken stock
  • 1 cup small pasta shells (100g)
  • 420g can baked beans in tomato sauce
  • 1 green zucchini, grated
  • PARMESAN TOASTIES
  • 4 slices rye bread
  • 1/3 cup finely grated parmesan
  • 1/2 teaspoon Tuscan seasoning
Method
  1. Heat oil in a large saucepan. Add onion and bacon. Cook, stirring occasionally, until onion is soft. Add carrot, tomatoes, seasoning, mustard and stock. Bring to boil. Add pasta. Simmer for about 10 minutes or until pasta is tender. Add beans and zucchini. Cook for a further 5 minute or until heated through.
  2. Meanwhile, to make parmesan toasties, arrange bread slices, in a single layer, on an oven tray. Cook under a hot grill until golden. Turn bread over. Sprinkle with cheese and seasoning. Return to grill. Cook for about 2 minutes or until cheese is golden. Cut into fingers.
  3. Serve soup with parmesan toasties.
  4. Tip. Soup can be made up to two days ahead. Keep, covered, in refrigerator. Or freeze for up to two months. Thaw in refrigerator before reheating.

I cooked this for dinner tonight and it was A . I cooked a double batch so we have plenty for lunches through the week. The bread was also very yummy. I did spray the bread first though was garlic flavoured cooking spray. This will definitely become a family favourite. Well done.

I cooked this last night for dinner and OH MY GOD, magnificant. My whole family loved it, my husband took some to work for lunch today and one of my daughters took some to school for lunch. And thank you for introducing me to Tusan Seasoning I will be using it alot more, the flavour is wonderful.

I cooked the pasta soup and it was great.

Just wanted to get the recipe from Thursday's show. I think it was based around a lamb stew.

Just making my second batch now. Didn't use Tuscan seasoning either time. Local supermarket didn't have it. Pretty much any herbs which can be used in, say, Italian cuisine such as basil, oregano, etc. I had some bouquet garni here made by a friend for tomato-based recipes. Worked very well.

Made the soup last night for hubby and daughter returning from a day of State softball games at freezing Blacktown Olympic Park. They loved it declared it the best soup ever! I got Tuscany seasoning at Coles. What a great flavour. So easy and I did a double batch. Might make it to treat workmates!

Newton Faulkner:Just wanted to say thank you for having Newton Faulkner on to play Dream Catch Me. We used that song about a month ago at my dads funeral and hearing this morning on your show was the first time i have heard since the funeral. It bought back so many great memories.
