Banana bread

Ingredients
  • 600 g mashed banana
  • 180 g dark brown sugar or rapadura
  • (CORRECTED) 150 ml macadamia nut oil
  • 1 teaspoon cinnamon
  • 15 g baking powder
  • 200 g desiccated coconut
  • 200 g almond meal
Method
  1. Heat oven to 170C
  2. Mix Banana, Brown Sugar, Oil, Cinnamon And Baking Powder
  3. Add Coconut + Almond Meal
  4. Line Loaf Tin With Oil + Liberally Coat With Coconut Make Sure Everything Is Well Coated
  5. Bake For 1 Hour Until Cooked. Test First With A Skewer So That It Comes Out Clean
  6. Cool And Enjoy
  7. Great Toasted And It's Gluten Free Too!

My daughter is gluten intolerant, and it is so good to have some delicious gluten free recipes. Choc chip cookies are her favourite. Many thanks!!

I am gluten intolerant and immediately wrote the recipe down.
Maybe you could have a visitor to discuss this further as it is alot more common than we realise and there doesnt seem to be a great range and choices available around in shops.

My mate Vince looks a bit like Eric Cartman from South Park because he eats too much unhealthy cake. I will bake this one for him so that he can slim down and fit into his old clothes.

I have 2 adult children. One has been lactose intolerant all her life & now my son has been put on a gluten free diet by the doctor. So, I am very glad to see a new recipe (Banana Bread) that is both gluten & lactose free that I can bake & serve when they come home. Thank You.

My Husband and 2 kids are allergic to nuts, can I replace the macadamia oil with vege oil? My son is also allergic to eggs and dairy, so this is a great recipe for him. Sometimes it feels like the child with allergies gets all the special things, and the other one misses out. this we can all share

These recipes will be a hit at our house although I will have to make both to keep all happy. I am Coeliac (gluten) so will not be able to have the Choc Chip Cookies (no oats)but, my son who has Fructose Malabsorption will be able to both and even my husband who is Diabetic can join in the fun.

Note to judyrice1 (9.15am). If your are truly Gluten Intolerant (coeliac) oats are not on the menu at all. No choc chip cookies!

Do solariums kill? I used to work in a solarium a couple of years ago, we sold a 12 pack of solarium sessions 12mins for lie-down or 6 stand-up as it's stronger. 2 Japanese girls came in one day bought the pack each and some cream, and they stayed for 36 or 48 mins which is not recommended. they were black after 2 days.
