Tropical fruit salad with Asian syrup

Ingredients
  • 1/2 small pineapple, peeled, chopped
  • 1/2 honeydew melon, peeled, chopped
  • 1 banana, peeled, sliced
  • 1 Kiwi fruit, peeled, halved and sliced
  • Toasted shredded coconut, to serve
  • ASIAN SYRUP
  • 1 cup water
  • 1/2 cup sugar
  • 1 tablespoon sliced fresh ginger
  • 1 star anise
  • 3 passionfruit
Method
  1. To make Asian Syrup, combine water, sugar, star anise and ginger in a medium pan. Stir over low heat until sugar is dissolved. Bring to boil, without stirring. Boil for 2 minutes. Remove from heat and stand mixture until cool. Strain over a jug then discard ginger and star anise. Stir in passionfruit pulp.
  2. Combine fruit in a large bowl, pour over Asian Syrup. Refrigerate until cold.
  3. To serve, divide fruit among bowls and top with toasted shredded coconut.

Solar power: Even with the rebate, solar panels are still too expensive for most households. Given the urgency of the problem, we need poorer households to have panels also. Best solution: a sliding means test - 100% rebate to low income households to no rebate at the other end
