Healthy scrambled eggs

Ingredients
  • 1 egg
  • 5 egg whites
  • 2 tbsp freshly chopped herbs (parsley or chives)
  • ground black pepper
  • 2 tbsp ricotta
  • 1 small handful baby spinach leaves
  • 1 tomato, sliced
  • 1 large mushroom grilled
  • 1/4 avocado, sliced
  • 1 thick slice whole grain toast or steamed brown rice
Method
  1. Instructions
  2. Grill the mushroom for a few minutes each side until warmed through. Whisk the eggs lightly with 1 tablespoon of milk and herbs then season with a little salt and pepper. Pour the eggs into a non-stick pan, stirring with a wooden spoon, gathering all the soft , moist curds until creamy. Fold in the ricotta. Place the toast or brown rice onto a serving plate then top with tomato, avocado, spinach and mushroom. Spoon in the eggs and serve.
  3. Variations
  4. Add smoked salmon on top of eggs.
  5. Use a little parmesan cheese in place of ricotta
  6. If you like chop all the veggies and stir into the eggs whilst cooking. Sweet corn is also delicious added to the eggs.

What do you do with all those egg yolks. It just seems a waste at a time where prices are high and everyone are on tight budgets because of mortgages, petrol prices and food bills.

i think using the egg yolk as well doesn't says its not healthy i would say add the egg yolk as well so we don't have to waste them co's the egg prices is going up as well

What a great breakfast. Low in fat and high in protein.....much healthier than using whole eggs. Everyone should just get a grip...wasting a few egg yolks is not the end of the world. Would love to see more healthy, yummy recipe like this!

Tasted fantastic.Great for just after a workout.I would recommend grilling the tomato and wilting the spinach.Those that bagged the recipe need a headcheck.They obviously don't even know what a kitchen looks like,let alone healthy food.Worried about wasting yolks?Give them to your dog for their coat

You can buy frozen egg whites if you are that worried about the egg yolks. Just a suggestion.
