Flip Shelton's stuffed monkeys

Ingredients
  • 155 grams butter
  • 155 g sugar
  • 1 egg
  • 250 g plain flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • Filling:
  • 1 cup currants, cranberries, sultanas
  • Zest of lemon
  • 1/4 cup boiling water
Method
  1. Preheat oven to 220 degrees.
  2. Place dried fruit and lemon zest in a small bowl and pour over boiling water.
  3. In a small bowl, cream butter and sugar.
  4. Add egg and beat gently again.
  5. In a larger bowl, sift flour and spices.
  6. Add butter mixture to flour and stir until well combined.
  7. Roll mixture out on a floured board.
  8. Cut into two different sized rounds – one bigger than the other.
  9. Place larger round on baking tray, top with a small amount of dried fruit mixture, then place smaller round on top.
  10. Cook for 15-20 minutes or until golden brown.
  11. Transfer to wire rack and allow to cool completely.
  12. Serve with a cuppa tea!

Solar power: Even with the rebate, solar panels are still too expensive for most households. Given the urgency of the problem, we need poorer households to have panels also. Best solution: a sliding means test - 100% rebate to low income households to no rebate at the other end
