Healthy chocolate brownies

Ingredients
  • 300g wholemeal spelt flour
  • 110g ground almonds
  • 120g unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 cup macadamia nut oil
  • 360g Pure maple syrup
  • 2 organic eggs
  • 120ml soy milk
  • 200g walnuts
  • 110g chocolate, chopped
Method
  1. Preheat the oven to 170C (325F/Gas 3).
  2. Line a square 25cm cake tin with baking paper.
  3. Combine the flour, ground almonds, cocoa, baking powder in a bowl.
  4. Add the macadamia oil, maple syrup, eggs, soy milk, chocolate and walnuts.
  5. Mix together well, then pour into the prepared cake tin, smoothing the top level.
  6. Bake for 35-45 minutes, or until the cake is cooked through.
  7. Cool to room temperature, then cut into squares.
  8. Store in an airtight container in the fridge for up to 4 days.
  9. Tip: For nut allergies substitute ground almonds for desiccated coconut or ground linseed meal. You can also substitute the macadamia nut oil for a grape seed oil and the walnuts for either dried apricots, sultanas or frozen cherries

What a great recipe...my son has dairy, egg, nut allergies and sensitivities to preservatives...this recipe and your alternate ingredients means I only have to substitute the eggs (for orgrans no egg) easy done.
I'm looking forward to tasting them once they're out of the oven!

The women who made the brownies (sorry cant remember her name) does she have a cook book out at all as i heard her mention she had a cafe. Or does she have a website where could get other recipes of hers from? Thanks

Are the measurements in this recipe correct? Only 11g of almond meal? 360g or ml of maple syrup? Thanks

I too would like confirmation on the the amount of Ground Almonds and the amount of Maple Syrup. I have an original American recipe, high in sugar and butter, so this will make an excellant alternative. Thanks

It's 110 g ground almonds, not 11 g.

The 360 ml maple syrup sounds a lot, but it's needed for sweetness. There's no other form of sugar (processd or raw) in the recipe apart from the plant sugars in the maple syrup.

Spelt flour sold in health food shops or heathfood section in supermarkets.

Do solariums kill? I used to work in a solarium a couple of years ago, we sold a 12 pack of solarium sessions 12mins for lie-down or 6 stand-up as it's stronger. 2 Japanese girls came in one day bought the pack each and some cream, and they stayed for 36 or 48 mins which is not recommended. they were black after 2 days.
