Crisp coconut biscuits

Makes 40
Ingredients
  • 125g butter
  • 1 egg
  • 1 cup coconut
  • 1 cup sugar
  • 2 cups self raising flour
Method
  1. Cream butter and sugar.
  2. Beat in egg.
  3. Add sifted flour and coconut (and almonds if adding)
  4. Roll into balls and press flat between hands. (the flatter the crunchier!)
  5. Place on greased oven trays (I use Bake paper on oven trays)
  6. Allow for a little spreading.
  7. Bake in moderate oven (180 degrees) for 10 - 12 mins.
  8. Optional - Reduce coconut to half cup and substitute with 100g toasted slivered almonds.

Great recipe Nat. I have all the ingredients I need at home don't have to rush to the shop before cooking. More of these recipes would be great.

I will give these ago I now have three children the youngest just a 11 days old so the older too will enjoy learning how to make your wonderful Crisp coconut biscuits while bubby has a sleep. Thanks for the cooking tip can take to play group and school.
