Rocky Road Recipe

Sep 09 10:51am
Ingredients
  • 200g block of chocolate
  • 1/2 cup chopped Allens jelly snakes
  • 1/2 cup shredded coconut
  • 1/2 cup chopped Pascall marshmellows
  • 1/2 cup chopped macadamias (I use roasted, salted)
Method
  1. Melt chocolate in microwave (approx 1 minute on HIGH)
  2. Add all ingredients and mix well until combined.
  3. Place in greased, lined slice tin.
  4. Refrigerate.
  5. Cut into slices before it sets.
  6. Tips: Always use good quality ingredients and fresh, crisp macadamias. Many would ask why I use salted, but the salt gives it a wonderful taste.
  7. Variations: Add your favourite chocolates or lollies - eg Clinkers, Maltesers, Turkish Delight, jelly babies etc.

the rocky road is very easy, & yummy to lick the bowl, but I found I needed lots more chocolate than 200g

When I make I usually use 3 blocks of choc and 1 1/2 cups of everything else, so there is heaps.Sorry you had not enough chocolate. Cadbury choc has recently got smaller also. The other problem I get is if kids eat too much chocolate before I get too add ingredients!!! Glad you enjoyed it anyway!

Kurt Fearnley: I was relief teaching in Blayney when I met Kurt as a young school boy. The first thing that struck me was his smile and contagious positive outlook at all times. I see nothing has changed with this outstanding Australian. Although I never saw him again, it is a testament to the power of his personality that I have not forgotten him more than 15 years later.
