Gavin's scones

Ingredients
  • 1 egg
  • 2 dessertspoons caster sugar
  • 1/2 cup thickened cream
  • 1/2 cup skim milk
  • 2 cups self-raising flour
  • Extra flour for rolling on bench
  • Jam and whipped cream, to serve
Method
  1. Heat oven to 180C and lightly grease a lamington tin or baking tray
  2. Whisk egg and sugar until combined
  3. Add cream and milk and stir to combine
  4. Sift flour into mixture. Stir to combine until mixture resembles soft dough
  5. Place dough in a bowl covered in a warm place for 10 minutes
  6. Turn onto a lightly floured surface
  7. Knead gently until smooth
  8. Pat dough to 2cm thickness and cut into rounds of approx 5cm
  9. Place onto tray
  10. Cook for 10 to 15 minutes until golden brown
  11. Serve warm with jam and cream

Thank you Gavin.. A quick & easy recipe.. They are the best scones ever!! Hubby & I ate the whole batch in one sitting YUMMO!!! Can't rave enough about them!!!
