Shazza's milk and white chocolate cookies

Ingredients
- 225gr butter, softened
- 1/2 cup raw sugar
- 1/4 cup condensed milk
- 2 cups self-raising flour
- 1 cup chocolate buttons
Method
- Preheat oven to 190C
- Cream butter (softened) and sugar, until pale and fluffy.
- Add condensed milk and cream again until light and fluffy.
- Stir in sifted flour and chocolate buttons
- Roll mixture into large balls using about a tablespoon of mixture for each cookie, place on greased trays and press down lightly with a fork to flatten slightly
- Bake for about 12-15 minutes
- Be careful not to overcook, base should be golden brown and a little colour on top
- Tips: I have done variations using Jersey caramels and white chocolate (they spread a little more as the caramel melts easily) and macadamias and white chocolate. Pistachios and white chocolate would work too. You could also use M&M's - about 3/4 cup instead of a cup

Kurt Fearnley: I was relief teaching in Blayney when I met Kurt as a young school boy. The first thing that struck me was his smile and contagious positive outlook at all times. I see nothing has changed with this outstanding Australian. Although I never saw him again, it is a testament to the power of his personality that I have not forgotten him more than 15 years later.
