Spaghetti bucatini

Ingredients
  • 1lb (450gr) Bucatini or Spaghetti
  • 1/2lb (220gr) Pancetta (smoked bacon)
  • 1 small to medium sized red onion, halved, then sliced not too thin
  • 1 28oz can San Marzano Italian Tomatoes, crushed by hand
  • Chillies to taste
  • Pinch of salt
  • Fresh cracked pepper
Method
  1. Dice pancetta into small cubes and cook in 2-3 tablespoons of olive oil until fat is rendered out and pancetta is browned.
  2. Add onion and cook over moderate heat until translucent. Add chillis. Add tomatoes. Add salt and pepper and simmer mixture for 20 minutes until flavors are incorporated.
  3. Meantime cook pasta until al dente, drain and add to pan where sauce has been cooking.
  4. Simmer over low heat for 2-3 minutes until sauce adheres to pasta.
  5. Serve with grated Parmesan cheese. Fly me to Australia for demonstration. Enjoy.

This one is simple - yummy- and easy on the hips. Suitable for gluten free pasta too without needing changes which is always a bonus. Its a ten from me :)
