Lemon herb couscous

Ingredients
  • 2 cups vegetable stock
  • 1 cup frozen peas and corn
  • 2 cups couscous
  • 2 teaspoons finely grated lemon rind
  • 2 tablespoons lemon juice
  • 1/2 cup finely chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • Salt and pepper, to taste
Method
  1. Place stock and frozen vegetables in a medium saucepan. Bring to boil. Cover and simmer for about 2 minutes or until tender. Remove from heat.
  2. Add couscous to stock. Cover and stand for 5 minutes. Fluff couscous with a fork. Add rind, juice and herbs. Season with salt and pepper. Stir to combine.
