Marinated chicken breasts

Ingredients
  • 1/4 cup apricot jam, warmed
  • 1/4 cup smokey barbecue sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mild paprika
  • 6 chicken breast fillets
  • Fresh parsley, to garnish
Method
  1. Combine jam, sauces and paprika in a large bowl. Add chicken breasts and turn to coat evenly. Refrigerate, covered, for several hours or overnight. Remove chicken and reserve marinade.
  2. Line a baking dish with non-stick baking paper. Arrange chicken over paper.
  3. Cook in a hot oven (200C) for about 20 minutes, turning halfway through and brushing with reserved marinade, or until cooked through.
  4. To serve, cut chicken into thick slices and arrange over lemon herb couscous. Garnish with fresh parsley.
