Healthy Start to 2009: Summer Fruit Crumble recipe

Ingredients
  • Serves 6
  • 1 kg of fresh summer fruits - choose from apricots, peaches, nectarines, plums, figs, strawberries, mango, pineapple, banana, raspberries etc
  • 1/4 - 1/2 cup raw sugar depending on the fruits you choose.
  • 1 vanilla pod, with seeds taken out OR 2 tsp vanilla extract Zest and juice from 1 orange
  • Pinch of cinnamon
  • 2 cups rolled oats
  • 1/2 cup coconut
  • 1/2 cup chopped nuts (such as walnuts, almonds, macadamias, pistachio or cashews)
  • 80ml warmed honey,
  • Apple juice concentrate OR pure maple syrup to moisten
Method
  1. Preheat oven to 180 C.
  2. Wash your fruit and chop into large chunks - removing any pips when necessary. Place into a baking tray and sprinkle with sugar, vanilla, cinnamon and orange zest and juice. Mix through . In another bowl combine oats, coconut, nuts and honey then sprinkle over the bowl, top of the fruits.
  3. Bake for 20 - 30 mins until hot and golden.
  4. Remove from the oven and allow to cool slightly. Serve with thick vanilla yoghurt or coconut sorbet and enjoy.
  5. NB: crumble can also be baked separately to the fruits and sprinkled on when required.

Went well THANKS ! Didn't have all exact ingredients but used whatever else in cupboard after buying some ripe & ready to eat summer fruits on special. I used a little less sugar and honey but still tasty. Would definitely make it again. Topped it with custard...yummy ! Keep up your good work.
