Peruvian Kingfish Cevice - by Manu and Miguel
Ingredients
- Kingfish fillet ,clean and pin boned
- Ginger
- Celery
- Garlic
- Coriander
- Limes
- Spanish onions
- Sweet potato
- Star anis
- Sugar syrup
- Vodka
Method
- Dice fillet 1x1 cm cubes
- Puree ginger ,celery, garlic, chilli and coriander
- To order mix in a bowl squeezed lime juice add and ice cube the fish dice and puree with fresh chilli
- Thinly sliced Spanish onion (rinse in cold water
- Pick coriander
- Turn sweet potato and poach in sugar syrup
- Left over juices in the bowl mix with vodka and serve in a shot glass
