Ingredients
  • 5 eggs
  • 2 teaspoons vegetable oil
  • 6 bacon rashers, finely chopped
  • 3 x 80g packets 97% fat free shaved smoked turkey, finely chopped
  • 2 cups finely shredded iceberg lettuce
  • 1/2 cup bottled Caesar dressing
  • 1/2 cup whole egg mayonnaise
  • 1/4 cup chopped fresh chives
  • Salt and pepper, to taste
  • 20 slices white bread
  • 125g butter, at room temperature
Method
  1. Place eggs in a saucepan. Cover with hot tap water. Bring to boil over medium heat. Gently boil for 9 minutes. Drain. Place eggs in a bowl of cold water. Cool slightly. Peel. Transfer to a large bowl. Mash.
  2. Cook bacon in a large, heated non-stick frying pan, stirring, until lightly browned. Drain on absorbent paper.
  3. Add bacon to eggs in bowl with turkey, lettuce, dressing, mayonnaise and chives. Stir well. Season with salt and pepper.
  4. Spread butter over one side of each slice of bread. Spread turkey mixture over half the bread slices. Top with remaining bread slices, butter-side, facing downwards.
  5. Using a serrated or electric knife, cut crusts off sandwiches. Cut each sandwich, diagonally, into quarters. Place on a serving plate. Cover and refrigerate.
  6. Remove sandwiches from refrigerator 30 minutes before serving.

Kurt Fearnley: I was relief teaching in Blayney when I met Kurt as a young school boy. The first thing that struck me was his smile and contagious positive outlook at all times. I see nothing has changed with this outstanding Australian. Although I never saw him again, it is a testament to the power of his personality that I have not forgotten him more than 15 years later.
