Cheese bread

Ingredients
  • 2 cups self-raising flour
  • 1 teaspoon salt
  • 1 1/2 cups grated cheddar cheese
  • 1/4 cup grated parmesan
  • 2 eggs, lightly beaten
  • 60g butter, melted
  • 1 cup milk
  • Extra 2 tablespoons grated parmesan
  • Cream cheese and sliced tomatoes, to serve
Method
  1. Grease a 12cm x 22cm medium loaf pan. Line base and sides with baking paper, extending paper 2cm above sides of pan.
  2. Place flour, salt and cheeses in a large bowl. Stir to combine. Add eggs, butter and milk. Mix with a wooden spoon until combined. Spoon into prepared pan, smooth over top. Sprinkle with extra parmesan.
  3. Cook in a moderate oven (180C) for about 40 minutes or until cooked when tested. Stand in pan 5 minutes before turning out onto a wire rack to cool.
  4. Serve bread warm or cold, cut into slices, with cream cheese and sliced tomatoes.
