Fried egg and bacon toasties

Ingredients
  • 8 thick slices white bread
  • 50g butter, melted
  • 8 eggs
  • 8 short cut bacon rashers
  • barbecue sauce, to serve
Method
  1. Using a 6cm round cutter, cut a circle out from the centre of each slice of bread. Reserve circles for another use. Brush both sides of bread with butter.
  2. Place two buttered bread slices, in a large frying pan over medium heat. Crack an egg into hole of each bread slice. Cook on one side until eggs are almost set. Turn bread over and cook until eggs are cooked to your liking. Repeat with remaining buttered bread slices and eggs.
  3. Cook bacon in a separate pan, over high heat, until crisp. Drain on absorbent paper.
  4. Serve egg toasties topped with bacon. Drizzle with barbecue sauce.
