Chorizo and tomato tortilla

Ingredients
  • Bottle of extra virgin olive oil
  • 1 small onion
  • 2 peeled medium sized desiree potato
  • 4 chorizo sausage diced 1cm by 1 cm
  • 2 sprigs of marjoram
  • 6 large free range eggs
  • 100ml milk
Method
  1. Use an oven proof frying pan and place over a medium heat, drizzle some olive oil on the pan.
  2. Sweat onions and potatoes for 5 min until onions are tender and potatoes are a bit soft.
  3. Add chopped chorizo sweat for another 5 min.
  4. Check if potatoes are caramelized then add your omelette mix.
  5. Stir in the hot pan for 30 seconds, and then finish it off in a preheated oven at 180OC for 5 min.
  6. Finished it off with fresh marjoram and serve when its room temperature.
