Healthy Chef muesli muffins

Ingredients
  • 300 g natural muesli or rolled oats
  • 700 ml orange juice or apple juice or water
  • 250 g wholemeal flour or spelt flour
  • 1 teaspoon ground cinnamon
  • 4 teaspoons baking powder
  • 150g low fat yoghurt
  • 2 organic eggs
  • 200 g honey or 150g brown sugar
  • 100 g macadamia nut oil or light grape seed oil
  • 2 cups grated apple
  • 4 extra apples to garnish
Method
  1. Combine the muesli and orange juice and allow to sit for at least 2 hours or overnight is best. The next day add the yoghurt, flour, cinnamon, baking powder, eggs, honey, oil and grated apple. Mix well and spoon into prepared muffin tins. Slice apple over the top to garnish then bake in a preheated 180 C oven for about 35 – 40 minutes until cooked.
