Sweet corn fritters with avocado

Ingredients
- 500 g sweet corn kernels
- 4 spring onions, chopped
- 2 organic eggs
- 1 bunch chopped parsely
- 1 bunch chopped mint
- 1 cup plain spelt flour or rice flour
- 1 teaspoon baking powder
- pinch of salt and pepper
- 1 avocado, sliced
Method
- Combine half and corn, 2 eggs and flour into a food processor and process until combined. Fold in the rest of the corn, spring onion and fresh herbs and season with salt and pepper. Cook over a medium heat until golden and crisp on each side. Serve with avocado and sweet chilli sauce.
