Sweet corn fritters with avocado

Makes 12
Ingredients
  • 500 g sweet corn kernels
  • 4 spring onions, chopped
  • 2 organic eggs
  • 1 bunch chopped parsely
  • 1 bunch chopped mint
  • 1 cup plain spelt flour or rice flour
  • 1 teaspoon baking powder
  • pinch of salt and pepper
  • 1 avocado, sliced
Method
  1. Combine half and corn, 2 eggs and flour into a food processor and process until combined. Fold in the rest of the corn, spring onion and fresh herbs and season with salt and pepper. Cook over a medium heat until golden and crisp on each side. Serve with avocado and sweet chilli sauce.
