Mushroom pizzas stuffed with spinach, organic eggs and roasted tomato

Ingredients
  • 2 large field mushrooms – stem removed
  • 1 tomato, halved or a few cherry tomatoes cut in half
  • 4 organic eggs
  • 1 tbsp chopped chives
  • 50 g low fat feta
  • handful of spinach
  • pinch of sea salt and pepper
  • 2 slices whole grain bread (optional)
Method
  1. Preheat your grill or oven.
  2. Place the mushroom and tomato halves onto a baking tray lined with foil sprinkle over a little salt and pepper and grill for 3 - 5 minutes until golden.
  3. Scramble the eggs in a good non stick pan with the chives.
  4. Arrange bread onto serving plates, top with the mushroom, spinach leaves eggs, feta and tomatoes
