Banana and blueberry stuffed French toast

Ingredients
  • 2 eggs
  • 1/2 cup low fat milk
  • pinch of nutmeg
  • 1 tsp vanilla
  • 4 slices good quality fruit bread or whole grain bread
  • 2 teaspoons blueberry jam or honey
  • 2 tbsp low fat ricotta or cottage cheese
  • 2 bananas, peeled and sliced lengthways
Method
  1. Combine the eggs, milk, nutmeg and vanilla.
  2. Heat a large non stick frying pan over a medium heat
  3. Add a little oil to the pan. Dip each slice of bread into the egg mixture then place into the frying pan. Cook for about 1-2 minutes each side until golden. Remove from the heat and onto serving plates. Spread half the French toast with a little blueberry jam followed by a tablespoon of ricotta and sliced banana. Sandwich together with the other piece of French toast. Enjoy.

  5. Other fruits can be served with this delicious healthy breakfast. Try strawberries, fresh figs and sautéed pears are really delicious. Orange zest can also be added to the milk and egg mix before dipping the bread.
  6. To make caramalised pears for your French toast, sauté 4 sliced pears in a medium hot pan with a splash of maple syrup, orange juice, cinnamon and vanilla. Cook for a few minutes until hot and caramelized then spoon over the cooked French toast to enjoy.
  7. For gluten and dairy free French toast just use a good quality gluten free bread, substitute milk for malt free soy milk or low fat coconut milk and omit the ricotta from the recipe.

  9. Make breakfast the most important meal of the day.
  10. Research has found a link between missing breakfast and obesity. Studies suggest that those who skip breakfast tend to over eat later in the day causing weight gain.

Do solariums kill? I used to work in a solarium a couple of years ago, we sold a 12 pack of solarium sessions 12mins for lie-down or 6 stand-up as it's stronger. 2 Japanese girls came in one day bought the pack each and some cream, and they stayed for 36 or 48 mins which is not recommended. they were black after 2 days.
