1. Boil, steam or microwave potatoes until tender. Drain well. Return to pan. Add soup mix. Mash until smooth. Reserve 1 cup potato for meatballs. Cover remaining mashed potato to keep warm.
2. To make meatballs, combine mince, zucchini, parsley, stuffing mix and reserved potato in a bowl. Season with salt and pepper. Mix well. Roll heaped tablespoons of mixture into balls.
3. Heat oil in a large frying pan. Add balls, in batches, and cook until browned all over and cooked through.
4. Meanwhile, pour pasta sauce into a saucepan. Stir over heat until hot.
5. Place meatballs on mashed potato and top with pasta sauce. Serve with mixed salad. Garnish with fresh parsley.
