Pancakes with maple syrup and kiwifruit

Ingredients
  • 1 cups self-raising flour
  • 1 tblsp caster sugar
  • 400ml buttermilk
  • 1 egg, lightly whisked
  • Light spray of canola or olive oil
  • 8 kiwifruit, peeled and cut in half
  • Maple syrup for serving
Method

1 Sift the flour into a bowl. Stir in the sugar and make a well in the centre.
2 Lightly whisk the buttermilk and egg, then add to the dry ingredients.
3 The mix will be slightly lumpy, but if you whisk the mixture too much the pancakes will be too tough.
4 Spray a non-stick pan with a little oil and place on a moderate heat. Spoon about a third of a cup of the mixture into the pan and allow it to cook for 1 to 1 minutes. The pancake will bubble when its ready to be turned over.
5 Cook for a further minute, then keep warm in a gentle oven while you cook the remaining pancakes.
6 Serve with fresh kiwifruit and maple syrup or low-fat yogurt.
