Apricot whips

Ingredients
  • 825g can apricot halves in natural juice, drained
  • 1/2 cup apricot nectar
  • 1/2 cup fat-free natural yogurt
  • 150g silken tofu
  • 2 tblsps honey
  • 3 fresh dates, seed removed
  • Cinnamon sugar, to serve
Method
1 Freeze drained apricots on a tray overnight, or until firm. Place frozen apricots and apricot nectar in a food processor and blend until smooth. Divide apricot mixture evenly among 4 glasses.

2 Place yogurt, tofu, honey and dates in a clean food processor and blend until smooth.

3 To serve, spoon yogurt mixture over apricot mixture. Dust whips with cinnamon sugar and serve immediately.

Tip: Whips are best assembled just before serving. Serve for breakfast or as a dessert.
