1. To make parmesan crumbs, place bread and cheese in a food processor. Process until mixture resembles fine breadcrumbs. Transfer to a large bowl. Season with salt and pepper.

3. To make chicken schnitzels, place chicken between two sheets of plastic wrap. Using a meat mallet, gently beat the thickest part of each breast until chicken is of an even thickness. Toss chicken in flour, shake off excess, then dip in eggs and coat in parmesan crumbs, pressing crumbs on firmly.

6. To assemble burgers, divide lettuce leaves over bases of rolls. Top with schnitzels, bacon then dressing. Replace tops of rolls.
