Tropical Ham and Egg Burgers

Ingredients
  • 6 ham steaks
  • 6 bacon rashers
  • 450g can sliced pineapple in syrup, drained
  • 6 eggs
  • 6 iceberg lettuce leaves, shredded
  • 6 damper rolls, split and toasted
  • Mango Relish:
  • 2 medium mangoes, finely chopped
  • 1 / 2 cup mango chutney
  • 4 green spring onions, finely sliced

1. To make mango relish, combine all ingredients in a small bowl. Cook ham steaks, bacon and pineapple, in a single layer, on a heated, oiled barbecue hot plate (or in a frying pan), until browned all over and bacon is cooked. Meanwhile, fry the eggs on a heated, oiled barbecue hot plate (or in a non-stick frying pan) until they are lightly browned underneath and the tops are just set, or cooked to your liking.

2. To assemble burgers, spread 1 tblsp of mango relish over bases of rolls. Top with lettuce, ham steaks, egg, bacon rashers and pineapple. Top with remaining mango relish and serve with the tops of the rolls on the side.
