Easter bunny marble cake

Ingredients
  • 340g packet golden buttercake mix
  • Red food colouring
  • MARSHMALLOW EARS
  • 1 tblsp gelatine
  • 1 cup caster sugar
  • 1 tsp lemon juice
  • 2kg plain flour
  • 1 whole egg
  • FLUFFY FROSTING
  • 1 cup caster sugar
  • 2 egg whites
  • TO DECORATE
  • 120g bag licorice metre strap
  • 2 yellow fruit rings, 2 peppermints, 2 Decors Cake Mate blue snowflakes, 3 halved marshmallows, 1 strawberry-and-cream lolly and 2 milk bottle lollies
  • 1 x 65g packet fairy floss
Method
1 Grease a 20cm round cake pan. Line base and side with baking paper. Make cake batter according to packet directions. Spoon half into a separate bowl and tint pink with food colouring. Drop alternate spoonfuls of each batter into prepared pan. Using a skewer, lightly swirl through batter for a marbled effect. Bake cake.

2 Meanwhile, make marshmallow ears by sprinkling gelatine over 1/4 cup cold water in a small jug. Combine 1/2 cup hot water and sugar in a pan. Stir over a low heat until sugar is dissolved. Stir gelatine mixture into sugar mixture until dissolved. Bring to boil. Boil gently for 6 minutes. Remove from heat and let cool until lukewarm. Pour into a bowl and add juice. Tint pink with food colouring. Beat on a high speed with an electric mixer for 4 minutes, or until mixture is thick but still a pouring consistency.

3 To make the 'ear' shape, spread flour evenly into a large baking dish. Press the egg 2cm deep and 7cm crossways for base. Press egg into flour to shape ear about 20cm in length. Repeat with other side then join both ears at the base. Fill hollows with marshmallow. Stand for 1 hour, or until set firm.

4 To make frosting, combine sugar and 1/3 cup water in a small pan. Stir over a low heat until sugar is dissolved. Bring to boil and boil uncovered without stirring until sugar reaches 116C on a candy thermometer or when 1 tsp of syrup dropped into cold water forms a soft ball between fingers. Remove from heat. Meanwhile beat egg whites in a bowl with electric mixer on high speed, adding hot syrup in a thin stream as you go. Beat for 10 minutes, or until mixture is thick and cool. Beat in food colouring to tint pink.

5 For bunny face, place cake on a board. Trim base of ears to fit round cake. Spread fluffy frosting over cake and make face with licorice cut into thin strips lengthways. You will need 2 x 3.5cm strips for eyebrows, 2 x 14cm strips for rims of eyes, 2 x 4.5cm strips for eyelids, 4 x 4cm strips for eyelashes, 2 x 14cm strips for cheeks, 6 x 3cm strips for whiskers and a 6cm strip for a chin. Make eyes with yellow fruit rings, peppermints and snowflakes. Arrange halved marshmallow and strawberry-and-cream lolly for a nose, halved marshmallow for cheeks and 2 milk bottles for teeth. Place fairy floss over ears just before serving.
