2 Beat butter and sugar in a small bowl with an electric mixer until light and fluffy. Beat in egg yolk until combined. Stir in combined sifted flours and custard powder. Mix to a firm dough. Press mixture evenly over base of prepared pan.
3 Cook in a moderate oven (180C) for about 15 minutes, or until lightly browned.
4 Meanwhile, make topping. Combine sugar, golden syrup and butter in a small pan. Stir over low heat until sugar is dissolved. Simmer, uncovered, for 5 minutes. Remove from heat and stir in cashews, then cool slightly.
5 Spread topping over hot base in pan. Return to oven and cook for 5 minutes, or until firm. Cool in pan.
6 Combine Dark Choc Melts and cream in a small pan. Stir over a low heat until smooth. Pour over slice in pan. Refrigerate for about 2 hours, or until set.
7 Serve slice cut into triangles.
Hint: Slice can be made up to 4 days ahead. Simply store them in an airtight container.
