Caramel cashew triangles

Ingredients
  • 150g butter, at room temp
  • 1/3 cup caster sugar
  • 1 egg yolk
  • 1 cup plain flour
  • 1/4 cup self-raising flour
  • 2 tblsps custard powder
  • 375g packet Dark Choc Melts
  • 2/3 cup thickened cream
  • CARAMEL FILLING
  • 1/3 cup packed brown sugar
  • 1 tblsp golden syrup
  • 90g butter, chopped
  • 1/2 cup unsalted roasted cashews, chopped
Method
1 Grease a 20cm x 30cm lamington pan. Line base and two long sides with baking paper, extending paper 2cm above edges of pan.

2 Beat butter and sugar in a small bowl with an electric mixer until light and fluffy. Beat in egg yolk until combined. Stir in combined sifted flours and custard powder. Mix to a firm dough. Press mixture evenly over base of prepared pan.

3 Cook in a moderate oven (180C) for about 15 minutes, or until lightly browned.

4 Meanwhile, make topping. Combine sugar, golden syrup and butter in a small pan. Stir over low heat until sugar is dissolved. Simmer, uncovered, for 5 minutes. Remove from heat and stir in cashews, then cool slightly.

5 Spread topping over hot base in pan. Return to oven and cook for 5 minutes, or until firm. Cool in pan.

6 Combine Dark Choc Melts and cream in a small pan. Stir over a low heat until smooth. Pour over slice in pan. Refrigerate for about 2 hours, or until set.

7 Serve slice cut into triangles.

Hint: Slice can be made up to 4 days ahead. Simply store them in an airtight container.

I am allergic to chocolate and nuts. Why are so many of your receipes about chocolate? I am looking for something healthy - without chocolate and nuts. Not everybody likes or eats these things you know.

sucks to be allergic to chocolate. I'm allergic to people of complain instead of putting some real effort into finding what they want. search tasteless food. most people love chocolate that's why there are so many recipes. I'm allergic to some nuts. Not all nuts are the same. some people drive me nuts

Please give me recipe for Prune Whip. My grandma used to make a delicious dessert called the Prune Whip which I still remember. I'd love to try out out and serve my family if I could have this recipe.
