Bunny biscuits

Ingredients
  • 150g butter, at room temperature
  • 1 cup icing sugar mixture
  • 1 egg
  • 1 tblsp cornflour
  • 1/2 cup almond meal
  • 1 3/4 cups plain flour
  • 1 cup White Choc Melts, melted
  • 1/4 cup shredded coconut, toasted
  • 1 cup Milk Choc Melts, melted
  • Extra 1/4 cup shredded coconut
Method
1 Beat butter and icing sugar mixture in a small bowl with an electric mixer until lightly and fluffy. Add egg, and beat until just combined. Stir in cornflour, almond meal and sifted flour. Turn mixture onto a lightly floured surface, and then press together to form a pastry. Refrigerate, covered, for 1 hour.

2 Roll out pastry to a 5mm thickness. Using an 8cm cutter, cut out 10 circles for the heads of the bunnies.

3 Re-roll pastry scraps to a 5mm thickness. Using a 9cm cutter, cut out circles. Then cut each in half using the same 9cm cutter to represent 'bunny ears'. Press ears onto the tops of the bunny heads. Lift shapes onto paper-lined baking trays.

4 Cook in a moderate oven (180C) for about 12 to 15 minutes, or until golden brown. Transfer to a wire rack to cool.

5 Spread white chocolate over one side of half the biscuits and sprinkle with toasted coconut. Return to wire rack until set. Spread milk chocolate over remaining biscuits and sprinkle with extra coconut. Let set on wire rack.

Hint: Biscuits can be made up to three days ahead. Store in an airtight container.

Instead of using almond meal what else can be use. Not all children can eat anything to do with nuts. Thankx Michelle

Hi Shellma,

I'm assuming you could use self raising flour in the same amount as specified for almond meal. Perhaps halve the entire recipe to do a smaller batch as a trial.

Hi there, you can use crushed Weetbix instead of almond meal as it gives it a similar flavour and adds the bulk. I use this substitute in many recipes and they have all come out great.

what about sea biscuits not that i love horses so much mates but in Austriala . A Biscuit is known as what a cooking is and other parts of the world. could make any shape , and is lots of fun with family and friend to cook at home anf much much more healthy and money saving to cook at home.
