Bat biscuits

Ingredients
  • 1 quantity basic biscuit dough
  • 2 1/2 cups icing sugar mixture
  • 1/4 cup hot water
  • Blue food colouring, to tint
  • Orange rainbow choc chips, to decorate
Method
1 Roll dough between 2 sheets of baking paper until 1cm thick. Using a bat-shaped cutter, cut shapes from dough and place 3cm apart onto baking paper lined oven trays.

2 Cook in a moderate oven (180C) for about 12 minutes, or until lightly browned. Stand biscuits on trays for 5 minutes before transferring to a wire rack to cool.

3 Sift icing sugar mixture in a bowl and gradually whisk in water until smooth. Tint mixture blue, using a few drops of food colouring.

4 Dip biscuits into icing and place onto a wire rack over a tray. Decorate with choc chips for eyes. Stand on wire racks until set.

Tip: Biscuits can be stored in an airtight container for up to three days. Uniced biscuits can be frozen for up to two months.
