Ingredients
- 1 cup rolled oats
- 1 teaspoons ground cinnamon
- 1/2 cup brown sugar, firmly packed
- 1 cup wholemeal plain flour
- 1/2 teaspoon bicarbonate of soda
- 8 Weet-Bix, crushed
- 11/2 cups grated apples
- 1/2 cup grated carrot
- 2 eggs
- 2 tablespoons golden syrup
- 75g butter, melted
- TOPPING
- 1/4 cup brown sugar, firmly packed
- 1/4 cup rolled oats
- 1 tablespoon desiccated coconut
Method1. Grease a 19cm x 30cm lamington pan. Line base and two long sides with baking paper, extending paper 2cm above edges of pan.
2. Combine rolled oats, cinnamon, sugar, flour, soda, Weet-Bix, apples and carrot in a large bowl.
3. Whisk eggs, golden syrup and melted butter in a small bowl. Add to dry ingredients and mix until well combined. Spread mixture into prepared pan.
4. To make topping, combine all ingredients in a small bowl.
5. Sprinkle topping over mixture in pan and lightly press down using hands.
6. Cook in a moderate oven (180C) for about 35 minutes or until cooked when tested. Cool slice in pan before cutting into squares.
Tip. You will need about 4 apples for this recipe. There are many varieties you can use, such as Golden Delicious, Sundowner or Granny Smith. Slice can be made up to four days ahead or freeze for up to two months. Thaw at room temperature.
