Orange Marinated Pork Cutlets

Ingredients
  • 8 x 250g pork cutlets
  • Grilled corn and tomato slices, to serve
  • Orange Marinade:
  • 2 tsps finely grated fresh ginger
  • 1 clove garlic, crushed
  • 1 tsp Chinese five-spice powder
  • 1 / 2 cup orange marmalade
  • 1 tblsp honey
  • 2 tblsps kecap manis (sweet soy sauce)

1. To make orange marinade, combine all ingredients in a small jug.
2. Trim excess fat from cutlets. Place cutlets in a large, shallow dish. Pour over marinade, turning cutlets to coat all over. Cover and refrigerate overnight.
3. Remove cutlets. Pour marinade into a medium pan. Place pan on heated barbecue. Bring to boil and
boil for 2 minutes. Remove.
4. Meanwhile, cook cutlets on a heated oiled barbecue
grill plate for about 5 minutes on each side, or until cooked to your liking. Remove and brush orange marinade over cutlets. Cover and stand for 2 to 3 minutes before serving.
5. Serve cutlets with grilled corn and tomato slices.
