Method
1 Preheat oven to 190C.
2 Line a roasting dish with cooking paper and lightly brush with oil. Place the potato slices onto the paper and cook in the oven for 20 minutes. When the potato is just cooked through, season with salt and pepper and sprinkle over the grated cheese. Then return to the oven and allow the cheese to become golden and slightly crisp.
3 Lightly dust the chicken breasts with flour and season. heat a large frying pan to quite hot and add the oil and butter. When the butter stops foaming, add the chicken breasts and cook until they become golden. Remove from pan and place onto a lightly oiled paper-lined roasting tray.
4 Place in the oven with the potato and cook for 8 to 10 minutes or until chicken is cooked through. Remove from oven and let chicken stand for 6 minutes.
5 Remove the potato and divide over 6 plates, top with the chicken breast and spoon over a little gravy. Garnish with fresh herbs and serve immediately.
