2 Combine onion mixture, mince, Italian herbs, uncooked rice, tomato sauce, barbecue sauce and mustard in a large bowl. Mix well. Season with salt and pepper. Roll level tablespoons of mince mixture into balls.
3 Heat remaining oil in a large frying pan. Add meatballs. Cook, turning, until browned all over. Remove from heat.
4 Combine tomato soup, diced tomatoes, water and basil in a large saucepan. Bring to boil. Add meatballs to pan. Simmer covered for about 30 minutes, or until rice is tender (do not stir meatballs).
5 Serve meatballs on mashed potato mixed with chopped parsley. Garnish with fresh herbs.
