Kick-Start Diet soup recipe

Ingredients
  • 3 tomatoes
  • 1kg carrots
  • 3 green capsicums
  • 2 cups green beans
  • 1 small bunch celery
  • with leaves
  • 2 cups water
  • 2 cups low-salt vegetable
  • stock
  • 2 large cans crushed
  • tomatoes
  • Herbs and spices, to season
  • Bunch parsley, to serve

METHOD
  • Chop vegies into small pieces. Place in pot with water, stock, canned tomatoes and spices.
  • Boil two minutes. Reduce heat and simmer one hour, or until tender. Add more water if needed.
  • Serve soup with parsley.
  • You can add any vegies you like. Try broccoli, brussels sprouts, asparagus, onion and leafy greens.

I've never been mad on veggies but made this soup and its delicious, I added some pearl barley which is fibre
