Sweet Chilli and Lime Chicken Skewers

Ingredients
  • 12 chicken tenderloins
  • 1 clove garlic, crushed
  • 1 tsp grated ginger
  • 2 tblsps oil
  • 2 tblsps lime juice
  • 1/4 cup sweet chilli sauce
  • Lime wedges, to serve
  • Outback Spirit Mango Native Mint Chutney, to serve
  • Bay leaves, to garnish
Method
1 Thread chicken onto 12 bamboo skewers and place in a large, shallow dish.

2 Combine garlic, ginger, oil, lime juice and sweet chilli sauce in a small jug. Drizzle over chicken and turn skewers to coat. Cover and refrigerate for two hours.

3 Remove skewers from marinade. Cook on a heated, oiled grill pan (or grill or barbeque) until browned and cooked through, brushing with marinade during cooking.

4 Serve skewers with lime wedges and chutney. Garnish skewers with bay leaves.

Hint: Soak bamboo skewers in water one hour before using to prevent them from burning during cooking. Serve skewers with baby Asian salad greens if desired.
