1 Place dark chocolate, rind and juice in a heatproof bowl. Sit bowl over a pan of simmering water. Stir until smooth. Remove from heat.
2 Place egg whites in the small bowl of an electric mixer. Beat until soft peaks form. Gradually add sugar, 1 tblsp at a time, beating between additions. Beat until mixture is smooth and sugar is dissolved.
3 Beat cream in the small bowl of an electric mixer until soft peaks form.
4 Stir yolks into warm chocolate mixture. Fold in egg whites in two batches. Then fold in cream, in two batches, until just combined.
5 Divide biscuits among eight serving glasses (1-cup capacity). Divide mousse over biscuits. Refrigerate overnight.
6 Serve mousse decorated with extra biscuits and orange segments.
Note: Amaretti biscuits are an Italian almond macaroon available from delicatessens and Italian grocers. For a special occasion, replace 1 tblsp of the orange juice with orange-flavoured liqueur.
