Double choc pancakes

Ingredients
  • 2/3 cup plain flour
  • 1/4 cup caster sugar
  • 2 tblsps cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 2/3 cup milk
  • 1 egg, lightly beaten
  • 2 tsps vegetable oil
  • 2/3 cup Milk Choc Bits
  • Cooking oil spray
  • Ice-cream and chocolate topping, to serve

 

 

1 Sift combined flour, sugar, cocoa, baking powder and soda into a large bowl. Whisk in combined milk, egg and oil. Stir in chocolate.


2 Heat a large non-stick electric frying pan over a medium to high heat. Spray with cooking oil.


3 Spoon 2 tblsps mixture into pan and repeat to make 3 pancakes. Cook for about 2 minutes, or until bubbles appear on surface. Turn and cook for another minute, or until browned underneath. Remove. Cover to keep warm. Repeat to make nine pancakes.


4 Serve warm double choc pancakes with ice-cream and chocolate topping.

 


Note: Pancakes can be made up to two days ahead. Reheat in the microwave.
