Apple cinnamon muffins

Ingredients
  • 1 2/3 cups self-raising flour
  • 1 tsp ground cinnamon
  • 3/4 cup brown sugar, firmly packed
  • 75g unsalted butter, melted
  • 1/2 cup milk
  • 1 egg, lightly beaten
  • 400g can pie apples
  • Ice-cream, to serve

 

 

1 Grease a 12-hole muffin pan (1/3-cup capacity).

Sift flour, cinnamon and sugar into a large bowl. Combine butter, milk, egg and apples in a separate bowl. Mix well. Add to flour mixture. Stir to just combine. Divide mixture among pan holes.


3 Cook in a hot oven (200C) for about 30 minutes, or until browned and cooked when tested. Stand in pan for 5 minutes before turning out onto a wire rack.

Serve warm muffins topped with ice-cream.
