1 Grease a 12-hole muffin pan (1/3-cup capacity).
2 Sift flour, cinnamon and sugar into a large bowl. Combine butter, milk, egg and apples in a separate bowl. Mix well. Add to flour mixture. Stir to just combine. Divide mixture among pan holes.
3 Cook in a hot oven (200C) for about 30 minutes, or until browned and cooked when tested. Stand in pan for 5 minutes before turning out onto a wire rack.
4 Serve warm muffins topped with ice-cream.
