Spiced meatloaf with vegetable rice

Ingredients
  • 250g beef mince
  • 250g sausage mince
  • 1 onion, grated
  • 2 eggs
  • 1/4 cup mango chutney
  • 2 tsps curry powder
  • 1 cup packaged breadcrumbs
  • 1/3 cup finely chopped fresh coriander
  • Salt and pepper, to taste
  • 1/3 cup plain yoghurt
  • 2 tblsps mango chutney
  • Lime wedges and pappadums, to serve
  • VEGETABLE RICE:
  • 1 cup long-grain white rice
  • 1 carrot, grated
  • 2 tblsps shredded coconut, toasted
  • 2 tblsps finely chopped fresh coriander

 

 

1 Grease a 12cm x 22cm medium loaf pan. Line base and sides with baking paper.


2 To make meatloaf, combine minces, onion, eggs, chutney, curry powder, breadcrumbs, coriander and salt and pepper in a large bowl. Press mixture into prepared pan.


3 Cook in a hot oven (200C) for about 45 minutes, or until cooked through. Stand in pan for 10 minutes. Turn out loaf onto a board. Slice thickly.


4 Meanwhile, to make vegetable rice, cook rice in a large saucepan of boiling salted water until just tender. Drain. Stir in carrot, coconut and coriander. Season with salt and pepper.


5 Combine yoghurt and chutney in a bowl.

Serve meatloaf and rice with yoghurt mixture, lime wedges and pappadums.
