Sausages with vegetable mash & caramelised onions

Ingredients
  • 3 medium carrots (360g), chopped
  • 2 medium potatoes (400g), chopped
  • 1 medium swede (200g), chopped
  • 1/3 cup milk
  • Salt and pepper, to taste
  • 1 tblsp olive oil
  • 8 pork sausages
  • CARAMELISED ONIONS:
  • 1 tblsp olive oil
  • 4 onions, halved, sliced
  • 2 tblsps honey

 

 

1 Boil carrots, potatoes and swede, separately, until tender. Drain. Return all vegetables to same saucepan. Stir over low heat for about 2 minutes, or until moisture has evaporated and vegetables are dry. Remove. Mash. Add milk. Beat with a wooden spoon until combined. Season. Cover.


2 To make caramelised onions, heat oil in a non-stick frying pan. Add onions. Cook, stirring occasionally, over a medium to low heat for 10 minutes, or until soft. Add honey. Cook, stirring, over a low heat, for about 15 minutes, or until onions are dark golden brown.


3 Meanwhile, heat oil in a large frying pan. Add sausages. Cook, turning occasionally, until browned all over and cooked through.


4 Serve sausages over mash. Top with caramelised onions.
