1 Boil carrots, potatoes and swede, separately, until tender. Drain. Return all vegetables to same saucepan. Stir over low heat for about 2 minutes, or until moisture has evaporated and vegetables are dry. Remove. Mash. Add milk. Beat with a wooden spoon until combined. Season. Cover.
2 To make caramelised onions, heat oil in a non-stick frying pan. Add onions. Cook, stirring occasionally, over a medium to low heat for 10 minutes, or until soft. Add honey. Cook, stirring, over a low heat, for about 15 minutes, or until onions are dark golden brown.
3 Meanwhile, heat oil in a large frying pan. Add sausages. Cook, turning occasionally, until browned all over and cooked through.
4 Serve sausages over mash. Top with caramelised onions.
