1 Place chicken in a medium saucepan. Add just enough cold water to cover chicken. Bring to boil. Simmer for about 10 minutes, or until chicken is cooked. Remove from heat. Cool in water for 10 minutes. Drain. Refrigerate, covered, until cold. Finely chop.
2 Place chicken, apple and celery in a large bowl. Add mayonnaise. Stir to combine.
3 To assemble, butter bread slices, sandwich two slices of bread with a lettuce leaf, cheese slice and chicken mixture.
4 To serve, cut sandwiches diagonally in half.
Tip: For a change, try using shaved turkey breast or ham instead of chicken.
