Vegetable salad with bacon crumbs

Ingredients
  • 2 red capsicums
  • 3 zucchini
  • 3 carrots
  • 1 tblsp olive oil
  • 1 tblsp Tuscan seasoning
  • Bacon crumbs:
  • 3 slices white bread
  • 1 tblsp olive oil
  • 250g bacon rashers, finely chopped

 


1 To make bacon crumbs, tear bread into small pieces. Heat oil in a large frying pan. Add bacon. Cook, stirring occasionally, until almost crisp. Add bread. Cook, stirring occasionally, until bread is crisp and golden. Remove from heat.


2 Cut capsicums, zucchini and carrots into strips about 1cm wide and 2cm long.


3 Boil, steam or microwave zucchini and carrots separately until tender, then drain.

4 Heat oil in a large frying pan. Add capsicums. Cook, stirring, until tender. Add zucchini and carrots. Cook, stirring, until heated through. Stir in seasoning. Transfer to a serving bowl.


5 Serve vegetable salad with bacon crumbs.
