Roast pork with apple sauce

Ingredients
  • 1.5kg boneless rolled pork roast
  • 2 tblsps salt
  • Steamed asparagus and broccolini, to serve
  • Watercress, to garnish
  • Apple sauce
  • 1/2 x 1kg tub apple quarters, drained
  • 1/2 cup brown sugar
  • 1 tsp finely grated orange rind
  • 1 tblsp orange juice
  • 2 tblsps honey
  • 1 tblsp apple cider vinegar
  • 1/2 tsp mixed spice
  • Salt and pepper, to taste
  • 1/4 cup sultanas
  • 1/4 cup dried apricots,
  • finely chopped

 

1 Make 5mm deep cuts 1cm apart in the pork rind. Place pork on a wire rack over sink. Pour enough boiling water over pork to open each cut. Pat dry. Sprinkle generously with salt and place in a baking dish.


2 Cook pork in a hot oven (200C) for 20 minutes. Reduce heat to moderate (180C). Cook for a further 1 hour, or until juices run pink to clear. Remove from oven.


3 Cook pork under a hot grill, for about 5 minutes, or until rind blisters and is crisp. Cover with foil and stand for 10 minutes before slicing.


4 Meanwhile, to make apple sauce, place apples, sugar, rind, juice, honey, vinegar and spices in a small saucepan. Cook, stirring, over a low heat until sugar is dissolved. Bring to boil. Reduce heat and simmer for 2 minutes. Allow to cool.


5 Spoon apple mixture into a blender. Blend until smooth. Return mixture to saucepan.
Add sultanas and apricots and stir over a medium heat until warm.


6 Serve pork with apple sauce, asparagus and broccolini, and garnish with watercress.
