Pear and Pecan Nut Muffins

Makes about 16 muffins
Ingredients
  • 1/2 cup sunflower oil
  • 2 eggs
  • 1/2 cup brown sugar
  • 2 cups coarsely grated pear (approx 2 pears)
  • 1/4 cup chopped pecan nuts
  • 2 tsps grated lemon rind
  • 2 tblsps lemon juice
  • 1 cup oat bran
  • 11/2 cups self-raising flour
  • 1/2 tsp bicarbonate of soda

Method

1 Preheat oven to 180C. Line muffin tin with paper muffin cases.

2 Whisk the oil, eggs and sugar together in a large bowl. Stir in the pear, nuts, lemon rind and juice.

3 Add the bran, flour and soda, stir until just combined.

4 Spoon 1/2 cups of the mixture into the muffin cases. Bake for 15 to 20 minutes or until lightly browned. Turn muffins out onto a wire rack to cool. Repeat with any remaining mixture.
