1 To make meatballs, place all ingredients in a medium bowl. Using your hand, mix well. Roll tablespoons of mixture into balls. Flatten slightly.
2 To make olive topping, combine olives, chutney and basil in a small bowl. Set aside.
3 Cook meatballs, in batches, in a heated, oiled frying pan, turning occasionally, until cooked through.
4 Reserve 20 meatballs for Spaghetti and Meatballs. Cover and refrigerate until needed.
5 To assemble burgers, divide lettuce, tomatoes and remaining meatballs over bases of buns. Top with olive topping, bocconcini and bun tops.
Two meals in one! Use your leftover meatballs to make this delicious spaghetti and meatball meal.
