Ingredients
- 2 bunches asparagus, trimmed and halved
- 200g green beans, halved
- 1 bunch Dutch carrots, trimmed and halved diagonally
- 1 bunch radishes, thinly sliced
- 250g mixed lettuce leaves
- Feta dressing:
- 2 tsps white wine vinegar
- 1 / 4 cup olive oil
- 1 / 2 cup vegetable oil
- 2 tsps Dijon mustard
- 2 tsps honey
- 100g feta, crumbled
- 2 tblsps warm water
- Pepper, to taste
1. Boil, steam or microwave asparagus, beans, carrots and radishes, separately, until tender. Rinse under cold water. Drain.
2. To make dressing, blend vinegar, oils, mustard and honey for 15 seconds. Add feta and blend. Mixture may look curdled. Add water. Blend until smooth. Season.
3. Arrange vegetables over lettuce in a large bowl. Drizzle with dressing.
