Okra, also known as lady’s finger, is native to tropical Africa and Asia. The green-ridged pods vary from 5cm to 10cm in length and contain white seeds. When cooked, okra releases a sticky, natural thickener, which is often used to thicken soups and casseroles. It can also be stir-fried and steamed. Choose smooth, firm, green okra pods that snap easily when pressed.
